Swedish Meat Balls with Mash…..

My Swedish friend and Fitness student here at Sunshine Coast TAFE Australia MS. Ulrika Gustafsson Sigurd has given me her favorite Swedish recipe I think she is having withdrawal symptoms…….anyway a little indulging now and then is fine ..Its fantastic try it…. Go easy on the butter…hahaha!!

Take 400 grams of lean low fat mince…. Mix in onion soup mix… add to mince a small amount (1/4 cup) of sour light cream (low fat)+ one tablespoon of your favourite bread crumbs + one raw egg + two teaspoons of parsley ……… mix all ingredients together in a large bowl to create  several small meat balls (25-30 mm in size) …fry these in pure butter……….peel and cook 5 large potatoes…..mash with skim milk and small amount of pure butter…… serve with meatballs and  a rich red wine jus!!!!! A glass of two of Red Wine will also not go astray either ….. Bon Appetite
