Rice Treat for kids (and big kids too)

Serve warm. This rice treat is delicious at any time of the day.

Serves: 3-4 people
Preparation time: 10 minutes
Cooking time: 30 minutes

120g rice, such as Basmati (low glycaemic)

1 litre of low fat skim milk, plus a small amount for the cornflour paste, plus 1/4 cup extra
1/4 cup caster sugar
2 strips lemon zest
1 1/2 teaspoons of cornflour
1/2 teaspoon vanilla essence
2 egg yolks
250g fresh blue berries and 250 g of strawberries to serve

Boil a large pot of water, add rice and cook 5 minutes. Drain and return to the pan. Add 4 cups milk, sugar and lemon zest and bring to a boil. Turn heat down and simmer very slowly for 30 minutes, or until rice has thickened and most of the milk has been used. Dispose of lemon zest.

2. Use a little extra milk to make the cornflour into a paste and stir this into the rice, together with the vanilla. Cook a further 5 minutes, then remove from the heat.

3. Stir in the egg yolks and extra milk. This rice treat may be served in small bowls while still warm. Stir in berries and strawberries, sprinkle on some cinnamon and serve.
