Prawn, Mango, Avaocado, Pasta Salad

Ingredients
(Serves 4)
2 avocados

Rocket lettuce
300g cooked fresh king prawns
6 spring onions, finely sliced
2 fresh mangos
1 tbsp French mustard
1Tsp of Extra virgin olive oil
Juice of one whole lemon
Pepper
Fresh pasta (vegtable)
Method
Roughly cut the avocados and mango up into 10cm squares Take prawns, avocados, mango, spring onions,rocket lettuce and combine with lemon juice and french mustard…… add pepper…
Cook fresh vegtable pasta for about 6-8 minutes or until al dente!!!…..
Drain pasta and add in all ingredients prepared above

Coat with a teaspoon of extra virgin Oilve oil….
Serve chilled……. with a nice Australian chardonay…
