Moroccan Vegetarian Stock Pot…Tough enough for blokes as well !!!

A Low Glycemic healthy quick meal….
Serves 4 people

Ingredients:
• One cup of drained Chick peas (washed)
• One cup of Drained Kidney Beans (washed)
• 360 grams of Sweet (orange) Potato
• 2 bunches of parsley
• 3 Cloves of garlic
• One large tin of chopped tomatoes
• One lemon
• 2 tablespoons of Master foods Moroccan spice
• Powdered Chilli powder
• 2 handfuls of fresh spinach leaves
• One large brown onion
Microwave sweet potato for 7 minutes on high, drain and wash chick peas and kidney beans,
Chop onion in rings….heat a non stick pan and throw in onions for one minute then add all ingredients, squeeze juice of one small lemon add finely chopped parsley, chilli and garlic….
Let simmer and dry fry for another 2 minutes…pour in tin of tomatoes…..when tomatoes are bubbling turn down heat and simmer another 2 minutes…..just before serving throw in the 2 handfuls of fresh spinach leaves and stir through and serve immediately.

    Not vegetarian. Morrocan spice mix has chicken in it.

      Thanks for that…very interesting I did some investigation and to some extent you are right HOWEVER I NOW FIND that the chicken flavor is actually chemicals in some of these types of products …not all of course !!….it is so hard to get easy to understand Labelling !!! thats for the response
