John Hart’s Favourite Muffins – Makes 12 mmmmm….Tasty……and Good for you as well !!

Ingredients

Wet mix

• 4 egg whites
• ¾ cup skim milk
• ½ cup no fat, plain yoghurt (try Jalna brand)
• ¼ cup apple juice concentrate
• 2 apples, peeled & chopped
• grated lemon rind from ½ lemon
• ½ cup sultanas
• cup of cherries or tinned apricots or peaches (no sugar – try Ardmona pie fruit)

Dry mix

• 1 ½ cups wholemeal flour
• 1 cup rolled oats
• 1 cup oatbran
• 3 teaspoons baking powder
• 1 ½ teaspoons cinnamon

Method

1. Pre-heat oven to 180°
2. Beat egg whites, milk, yoghurt and apple juice
3. Mix in apples, cherries (or replacement fruit), lemon rind and sultanas
4. Combine dry ingredients and fold into the wet mix
5. Pour into muffin tin
6. Bake for 25-30 mins
